All air contains some amounts of water vapor in every environment. Water vapor exerts a partial pressure, which increases proportionally as the water concentration increases. At any given temperature there is a limiting maximum vapor pressure, called the saturated vapor pressure, beyond which the air cannot hold any more water vapor. Air at a given temperature coming into contact with a cooler surface, is then cooled locally to the temperature of the surface. If the saturated vapor pressure of the cooled air is less than the original vapor pressure, the excess water is deposited on the surface in water droplets known as condensation. The surface temperature at which condensation forms is called the dew point. (Think of a glass of ice water in your hands on a warm day.)The ratio of water vapor pressure at room temperature to the saturated water vapor pressure at that temperature is known as "relative humidity."
