Gettin' Saucy: Linde CRYOLINE PE Freezer Shapes Sauces at Y Not Foods

Murray Hill & New Providence, New Jersey, U.S. - Freezing technology from Linde North America is helping Y Not Foods, Inc. shape sauces into uniformly sized chips for retail and food service customers.

Linde North America is a member of The Linde Group, a world-leading gases and engineering company and an expert in providing processors with cryogenic chilling and freezing solutions to improve food safety and quality. Y Not Foods, based in Madison, Wisconsin, is a manufacturer and distributor of food products ranging from portion control liquids and sauces to frozen sauce chips.

To make the sauce chips, Y Not turned to the Linde CRYOLINE® PE freezer - the only cryogenic technology available that can create individually quick-frozen chips, discs, cubes, squares or even logo-inscribed shapes from thin or chunky sauces, purees or soups of consistent weight.

"This freezer delivers consistently uniform shapes, which eliminates the need for extra bags, and minimizes waste by enabling better measuring of sauce to the food product - consumers can easily portion and defrost the exact amount they need," said Mark DiMaggio, head of food and beverage markets, Linde North America.

Y Not's sauce chips are used in ready-to-cook bag meals like pasta and cut vegetables sold in stores or in portioning and quality control in restaurant and foodservice settings.

"The Linde CRYOLINE PE freezer helps us provide our customers with uniform size chips ranging from 5 to 7 grams depending on the density of the sauce we are freezing," said Mary-Ellen Nathan, Chief Executive Officer for Y NOT Foods. "This gives our customers great portion control and consistency in their finished product. We are also able to freeze sauces with higher fat, sugar or salt due to the unique design of the unit."

"The Linde technology also provides us with the flexibility to produce small minimum orders or higher volume orders," said Nathan. "I have been in the sauce manufacturing business since 1986 and have seen many types of related equipment and the CRYOLINE PE freezer is definitely state of the art."

The PE freezer is part of the Linde CRYOLINE family of freezing and chilling solutions. CRYOLINE products deliver value through high throughput, product quality and lower cost of cryogen. The CRYOLINE® PE freezer is available in 1,000 or 2,500 pound an hour capacities. A model is available for product testing and customer demonstrations in Linde's food lab, located in Cleveland, Ohio.
