Gemini Bakery Equipment Now offers a TWS with a Water Friendly Option and Reduced Flour Execution Roll Divider-Rounder

The WP/Gemini line of Volumetric Dividers has recently seen a large increase in popularity to the gourmet pan bread and hearth bread producer. Our Clients are seeing great success in producing many types of organic and specialty products including artisan breads and rolls. Gemini offers a few different knife-and-ram Dividers with the most popular being the B700 and the V900.

To explain the process a bit more, we can focus on the above mentioned organic bread as an example. In the best-case scenario, a Volumetric Divider has a proportioning hopper overhead of the Divider hopper that delivers the dough and reduces the amount of power needed to divide the dough evenly and more gently. The Divider can be tied into an inline checkweigher which is connected via a feedback loop to automatically control the scaling weight. Servo weight control is very helpful in producing a repeatable weight across a wide product type variety.

For specialty and hearth pan rolls and buns, Gemini now offers a TWS with a “water friendly” option which includes such design and construction features as closed frame tubing. Another recent improvement is that we now also offer a “Reduced-Flour” option as well, the TWS-RF which has significantly reduced flour waste by better utilizing the flour dispensed. In other words, almost eliminating the flour waste on the floor. In terms of product weight ranges, the TWS can produce dough pieces as low as 1 ounce and as high as 16 ounces depending on the configuration.

Weight range and speed will determine if a knife-and-ram volumetric Divider or a drum-and-piston Divider is the proper machine choice. Gemini works with the Client in a collaborative manner to make sure it is a proper match. Gemini strongly encourages testing a Client’s formulation and even visiting bakeries with similar products (where possible) to promote a successful equipment selection since everyone’s dough is different. All in all, as you innovate your dough, there should be a machinery combination that can be engineered to produce a lot of your products for many years to come.
