Effective Against E. Coli

Olathe, Kan. - With every new outbreak of E. coli, the protein industry has re-examined its protocols for food safety. One crucial change has been the use of hot water in washing and pasteurizing systems.

Washing beef carcasses before evisceration and at the end of the slaughter process has been proven as an effective antimicrobial intervention, resulting in greater than 99% reductions in pathogens. Specifically, exposing the surface of a carcass to hot water at a minimum of 165° F for at least 10 seconds, followed by an antimicrobial spray, is most effective in reducing pathogens.

Chad Equipment's Hot Water Pasteurization System maintains 165° F on the surface of the carcass with a spray temperature as low as 185° F and delivers the desired exposure time at the carcass surface. The system also provides significant water savings by using recirculated water to minimize water and steam usage and disposal costs. The Hot Water Pasteurization System is USDA-approved and independent testing has confirmed that the recirculated water is pathogen free.
