Original Press Release:

ECD’s BakeWATCH® M.O.L.E.® and Kill Step Calculator Deliver Simple, Fast FSMA Compliance Solution

December 5, 2017 – ECD’s BakeWATCH® has introduced a streamlined, highly-effective solution for cumbersome, complex FSMA compliance data generation and reporting routines. Combining its award-winning M.O.L.E.® thermal profiler technology and a complimentary Windows-based Kill Step Calculator program, BakeWATCH has simplified and expedited the process of collecting data and producing FSMA compliance documentation.

“Bakers that have used Excel-based kill step calculators for FSMA compliance are all-too-familiar with the time-consuming and complex routine,” explains Ray Pearce, ECD Baking Product Manager. “Dealing with multi-channel data sets and copying and pasting specific temperature range readings to generate the salmonella D-reduction report as specified by the AIB International Kill Step Protocol is not only a strain on productivity, but is also error-prone. BakeWATCH M.O.L.E.® and the BakeWATCH-developed Kill Step Calculator overcome these challenges.”

The BakeWATCH M.O.L.E. thermal profiler is a portable, programmable tool that provides bakers and food production specialists with the ability to measure, record and document oven performance and optimize baked goods consistency for maximum quality, yield and throughput. Temperature data recorded by BakeWATCH M.O.L.E. is easily downloaded directly into the BakeWATCH Kill Step Calculator application, where each channel’s data is automatically filtered through three-way validation per the FDA-approved AIB Kill Step Protocol standards. Subsequent collection of the 30 channels of dough temperature data followed by a simple click of the “Generate Report” button produces the salmonella D-Reduction report and the FSMA compliance documentation required for audit proof.

Since the introduction of the BakeWATCH Kill Step Calculator, bakers across the globe have realized significant productivity improvements and have reported audit success.

Marc Michalski, QA Coordinator at Costanzo’s Bakery in Buffalo, NY, appreciates the simplicity of the Kill Step Calculator and the thorough training provided in the BakeWATCH webinar. “The Kill Step Calculator software is so straightforward and easy to use,” explains Michalski. “In fact, the simplicity and effectiveness of the tool helped convince our management team to invest in a BakeWATCH SuperM.O.L.E. Gold 2 kit, which we now are using for outstanding baking consistency. In addition, the BakeWATCH team’s online kick-start training session was one of the most helpful supplier webinars we’ve experienced, allowing us to begin implementation of the tools immediately.”

“With BakeWATCH M.O.L.E. and Kill Step Calculator, required record keeping and personnel training time for this vital work is reduced to a minimum, while the ability to start, stop and resume kill step data collection adds another layer of flexibility,” says Pearce in conclusion. “Together, these tools give bakers FSMA compliance confidence, while improving productivity and profitability.”
