Advanced Bread Conditioning



UDEN, The Netherlands, -- Advanced Freezers from The Netherlands has developed a range of spiral cooler/chillers for the bakery industry: the Advanced Cooling systems. These represent the ideal bread-cooling concept in terms of hygiene, shelf life and product safety. The Advanced spiral cooler creates an optimum environment within the cooling area (insulated enclosure) to ensure that the products are cooled to a consistently high standard. This includes the use of an air-treatment or air-conditioning unit which maintains a constant level of cooling, irrespective of the weather conditions or temperature either outside the building or inside the production hall, and hence guarantees top-quality products. Cooling Conditions The ideal conditions for obtaining the perfect product after cooling depend on: 1) A constant temperature where the set temperature (between 15 and 25 degree(s)C) can be held within the range of plus or minus 1 degree(s).


2) The moisture content (or relative humidity) of the cooling air should be kept within the range of plus or minus 2%. This is crucial to avoid any dehydration or excessive moisturizing of the products.


3) The air speed that is generated over the products to be cooled should be approximately 1-2 metres per second, depending on their consistency. Advanced Cooling systems use gentle horizontal laminar airflow throughout the entire cooler for a perfect result.


4) Especially for products with a long shelf life, it is important to create an over pressure within the cooling area to avoid polluted air entering the insulated enclosure through any gaps.


5) To help reduce the energy costs for the process air, fresh outside air can be partly taken into the circuit as well. However, this must be filtered before entering the cooler, which is why the Advanced Cooling system offers mechanical filters in various formats and filter classifications. Ultraviolet light can also be used to keep the air free of microorganisms.

The air-conditioning units can be installed either within the production area, namely on top of the insulated spiral enclosure, or outdoors in which case stainless-steel units are available.

Advanced Cooling spirals are designed in line with each client's specific needs, based on the required capacity and retention time. They are available in various belt lengths, as single or double-drum systems, and in any belt width as necessary. Advanced spiral cooler belts are usually made of stainless steel (with or without a mesh overlay) or plastic, and are available in a choice of colours.

In addition to supplying the spiral cooling equipment itself, Advanced is also specialized in supplying and installing product infeed and outfeed systems as required. Therefore, oven de-loaders, conveyor and divider (aligning) belts, gravity slides or spiral de-elevators are all in a day's work for Advanced Freezers.
