Foster Launches Affordable, Compact Blast Chiller



Foster Refrigerator, Europe's market leading commercial refrigeration manufacturer, has launched a new economy blast chiller, making blast chilling technology more accessible than ever before.

With a list price of £2,650, the FXBC10 Blast Chiller is 15% cheaper than Foster's previous Economy Blast Chiller.

The new blast chiller is compact, and with a capacity of 10kg it is ideal for small or low volume kitchens. It is capable of blast chilling product from 70ºC to 3ºC within 90 minutes, ensuring food quality is maintained and that HACCP food safety laws are complied with.

Current food legislation requires that all food must be cooled as quickly as possible. This means that whenever food is chilled or frozen, it must be in the "Danger Zone" between +8ºC and +68ºC where bacteria multiply fastest, for as little time as possible.

John Savage, Foster's Foodservice Director says: "Our new economy blast chiller really puts blast chiller technology within the reach of restaurateurs, hoteliers and publicans who may not have been able to afford a blast chiller in the past."

Blast chilling can be a great way of reducing wastage. For example, left over food remaining from a hot servery counter can be quickly and safely chilled for later use with complete confidence in its quality and safety. In addition, advance food preparation lets you conveniently prepare larger batches and then chill for later use. Once prepared and chilled, only the correct numbers need be reheated, as legislation states that chilled food can be safely kept below +3ºC for up to 5 days after production.
