Multivac Spotlights HPP at Process EXPO 2011



Multivac, a world leader in packaging and related technologies, will present a seminar entitled, "The Promise and Challenges of Applying High Pressure Pasteurization (HPP) for RTE Food Products" at PROCESS EXPO2011, Nov.1-4, at Chicago's McCormick Place. HPP is a process that utilizes high pressure water based technology to destroy pathogenic bacteria. The HPP process can take place at refrigerated temperatures, which benefits its use on heat-sensitive products like fruits, vegetables, and meat. In addition to the obvious food safety aspects the process has also been shown to have a positive impact on the nutritional and taste/sensory qualities of products run through the system.

Multivac has developed unique and proprietary technologies, which expand the use of HPP to include MAP packages and other traditionally sensitive package solutions, which can potentially be destroyed by the pressures of up to 80,000 PSI employed by the HPP process.

Jan Erik Kuhlmann, President of Multivac, Inc. in Kansas City, MO, says the seminar is directed to, "food processors and retailers, who are concerned with food safety and wish to learn more about the application of High Pressure Pasteurization for food products". In addition to presenting the science behind HPP, the seminar will unveil the development of an automated process for the loading and unloading of the HPP pressure vessels. When asked what the main "take-away" for the processors participating in the seminar will be, Kuhlmann replied: "Understanding the true potential, limitations, and pit-falls of using HPP pasteurization technology for food products both from a food safety standpoint and from the view of the economic drivers".

The leader of the seminar will be Dr. Tobias Richter whose doctoral thesis focused on the impact of HPP on food packaging (Munich Technical University). Multivac subject matter experts will be available at the Multivac booth at PROCESS EXPO 2011 throughout the four days of the show.
